One-pot Meal: Beef stew Noodles


I've always like one-pot meals. It's easy to whip up and doesn't require too much of my effort. Healthy & nutritious too. Best to have this on cold, rainy days, especially on the weekends. Hehehe...

{Beef Stew Noodles}

What you need
- Potatoes (just a couple of potatoes, diced)
- Carrots (cut into bite-size pieces)
- Beef meat (cut into bite-size & marinated with oyster sauce, sesame oil, 
  white pepper & some honey)
- Chye sim (cut into 5cm stalks)
- Minced garlic
- Grinded onion
- Eggs (lightly beaten)
- Flat yellow noodles
- Fried shallots & Chinese parsley for garnish

Seasoning for the stew
- Chicken stock (concentrate or the stock itself)
- Sesame oil
- White pepper
- Kicap manis
- Salt - adjust to your own taste preference

Method
- Sauté the mince garlic in a pot with some cooking oil till golden brown
- Add in the onion and cook for 5mins
- Add the beef and stir-fry till 70% cooked
- Add chicken stock & water into the pot and boil for 30mins
- Add the carrots and potatoes for another 20mins
- Add the seasoning to the soup
- Throw in the chye sim and noodles and boil for another 5mins
- Stir in the beaten eggs
- Finally add a dash of pepper when you off the fire on the stove

Garnish with fried shallots & serve :)
