Fried Mee Tai Mak with Sambal



{Fried Mee Tai Mak with Sambal}
- Serves 4

What you need
- 1/2kg of Mee Tai Mak
- chicken meat or sausage(cut in strips/sliced)
- 2 eggs
- 1 bunch of chives (cut to 4cm strips)
- 1 handful of bean sprouts
- 3 fishcakes (sliced)
- 300g of prawns (peeled and left with the tail shell)
- 4 Onions / 2 garlic (grinded)
- 3 table spoons of dried chili (freshly grinded or ready-made)
- 80g of dried shrimp (grinded)

Method
- Heat up 3 tablespoons of cooking oil
- Saute the grinded onion & garlic mix until you can smell the fragrance
- Add in the grinded chili and mix well
- While the sambal is cooking, prepare your scrambled eggs in a smaller pan
- Cook for another 8-10mins or until the oil starts to separate from the chili
- Add in the chicken strips & prawns and stir-fry till half-cooked
- Add in the fishcake & mee tai mak and stir-fry for 5mins
- Add in the bean sprouts and chives and stir-fry for another 5mins
- Lastly add in the scrambled eggs, mix well and garnish with fried shallots

*PS: My proportions are of personal preference-based, if you prefer to have more of certain ingredients please go ahead and modify it k :)
